Super-Simple Sweet Potato Soup

Calling this a recipe almost seems like a joke -- it's so easy to make, you won't believe it's all from scratch!

We go through a bag or two of sweet potatoes each week, so I always have them on hand and this recipe is one I can throw together in a flash when I have no time or no clue what to fix for dinner!


What You Need


3-pound bag sweet potatoes

1 quart chicken broth

1 can of this type of coconut milk (cream only)

1/2 teaspoon nutmeg

salt & pepper to taste


We leave the skins on our taters, but feel free to peel yours.


What You Do



1.  Boil & drain the sweet potatoes, then blend them with the rest of the ingredients until smooth.

2. Transfer to a pot and heat until warm. That's it. seriously!

I don't know if I'd call it a recipe, but I definitely call it easy!
